Chicken and Veggie Burritos

I am always looking for quick, easy and healthy recipes. This one is a winner. Prep time is around ten minutes, and the taste is amazing. This recipe is perfect for an evening meal or to pack in your lunch for work.

We always cook up extra chicken breasts on the weekend to use during the week, so we already had all the ingredients on hand to make this for dinner last night.

Ingredients

  • 1 cooked boneless, skinless Chicken Breast (roasted or grilled, marinated), diced
  • 1 cup cooked Brown Rice
  • 1 cup fresh spinach
  • 3 green onions, chopped
  • 4 cherry tomatoes, chopped
  • 1 tbsp Olive Oil
  • 1/2 tsp minced fresh Garlic
  • 4 Corn or Low Carb Tortillas
  • Salsa

Directions

Heat oil in a medium skillet, add vegetables and garlic. Saute until tender, about 3 – 5 minutes.

Add chicken to skillet and stir. Add rice and stir to combine everything. Cook long enough for all to get hot.

Warm tortillas in the microwave. Place mixture in the middle of the tortillas, top with salsa and roll up burrito style.

You could use whatever veggies or meat you have on hand, and I sure it will turn out amazing.
