F – is for Friday, and fajitas!
Who doesn’t love fajitas?
This is a great low carb option to one of our favorite meals. It meets all the requirements of a low carb lifestyle and tastes great.
- 1 lb Flank or Skirt steak
- 1 onion
- 1 large bell pepper, or several small peppers
- fajita seasoning packet
- 1 Tbs olive oil
- 1 Tbs apple cider vinegar
- Heart of Romaine lettuce cups
- Cheese, sour cream, avocado for topping
Slice flank steak, onions and peppers into thin strips.
In a small bowl, whisk together fajita seasoning, olive oil and vinegar.
Place veggies and steak in separate Ziploc bags.
Add half of the seasoning mix to each bag. Mash the bags to coat the ingredients. Seal and place in the refrigerator.
Refrigerate over night if you are planning that far ahead. Otherwise, refrigerate at least an hour.
Preheat oven to 400 degrees.
Spray a cookie sheet with non-stick cooking spray.
Spread steak and veggies on the cookie sheet.
Cook 20 – 25 minutes. Stir half way through cooking.
Fill lettuce cups with meat and veggies. Top with sour cream, cheese and avocado.
