Overnight French Toast

During the week I work very hard to stick to my eating plan. As a reward for a week well done, we splurge a little on breakfast. You know what I’m talking about. Carbs!

During the week, we watch our local news while we’re having breakfast. There is a segment called Mr. Food. We saw this recipe on his show a few weeks ago, and decided it looked too good not to try.

I tweaked it a little from the original and came up with a yummy weekend breakfast that we will definitely being putting in the rotation.

Easy Overnight French Toast

Ingredients

  • 1 loaf French bread, cut into 6 thick slices
  • 4 eggs
  • 1 cup evaporated milk
  • 1/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Directions

Coat a baking dish with cooking spray. Place bread slices in a single layer in baking dish.

In a medium bowl, combine remaining ingredients; mix well and pour over bread slices. Sprinkle a little extra cinnamon and nutmeg over the top.

Cover and chill overnight so most of the liquid has been absorbed.

In the morning, preheat the oven and remove the baking dish from the refrigerator and let it warm up to room temperature.

Using tongs, flip the toast over.

Bake uncovered 35 to 40 minutes, or until golden brown.

Serve topped with your favorite syrup.
